While Saigon Sisters was a cozy restaurant and the company was fantastic, the food was sadly not my favorite. Voted one of Chicago’s best new restaurants, the service was great, the price right and the food fresh. I think if you were a fan of Vietnamese food, you’d enjoy this place. But, with so many other options still out there to try, this is one I’m crossing off my list.

Slowly but surely, I’ve discovered that I love Thai food. Unfortunately, similar to Indian food, it does quite the number on my stomach. Damn acid reflux. Once again, I only chose the best for this project – Lotus of Siam. If you blink, you’ll miss this place. And, if you don’t trek down to the shady neighborhoods, you’ll definitely miss this place. As someone said, it’s like Dorothy opening the front door to her house and stepping into Oz. A true hole in the wall, Lotus of Siam is lauded as the best Thai food hands down. Albeit, I think when you don’t go extra spicy, it loses a lot of it’s glamour. We had some really interesting dishes here, none of which I can remember the names of :(. But, in the end, Miss Plain Jane, enjoys Chicken Pad Thai from Star of Siam the most.
Albert Einstein said, “the only source of knowledge is experience.” With that in mind, as part of my adventure, 1 Year, 10 Projects, 100 Discoveries, ten of the discoveries are about experiences I’ve always wanted to have. Disneyland. Where the magic begins and dreams come true. Granted, living in Florida, I’ve been to Disney World many times, but I had never been to the West Coast version, Disneyland. Surprisingly, I dressed all wrong for Disneyland. I mean, I forgot to wear my princess dress and crown! It was a travesty. But, I did get to see Ariel, Cinderella’s Fairy Godmother, Tinkerbell, Minnie Mouse, Mickey, Pooh, Tigger, Donald Duck and Chip and Dale!
It was a magical and perfect day, ending in one of the best fireworks shows I have ever seen. No joke. Besides, who can beat a fireworks show where Tinkerbell actually flys through the sky?! I ate too much junk food, rode as many rides as could be packed into a day (favorites included Winnie the Pooh’s adventure and Buzz Lightyear), bought way too many mindless keepsakes and picked up an addiction to Vinylmation.
My advice to you? Go to Disneyland with a child that is still young enough to believe in Santa Claus. You’ll see the true magic of Disney through their eyes. I promise you, there will be no other experience quite like it.

I’ve been wanting to skydive since I was 18. But, I’ve always let others do the planning. Not surprisingly, they’ve never gone through with it. So, when the Groupon for skydiving landed in my inbox, it was serendipity at it’s finest. The Groupon was bought, the skydive booked and with jumpsuit #11, #3 for this project was in the bag.
I love the philosophy behind skydiving. Literally, you are leaping and building your wings on the way down, one of my favorite things to do. Before the jump, you have to watch an instructional video. I missed the whole quote, but in the video, the instructor says, “There is no perfect parachute. There is no perfect jump.” Wow. Just like life 🙂 But, even with the imperfection, you do it anyway. And guess what, most of the time, it works out just fine.
The experience? Thrilling, beautiful. And interestingly enough, you learn without a doubt the person you would think about before you jump from a plane; the person who calms your nerves and gives you strength like no one else. For me, the person that came into my head and stuck was a shocking one. Even more shocking, were the people that I tried, but couldn’t make stick. But, the people that didn’t stick? They’re not any less important in my life. Every friend has a place, time and special role.
Was it scary? Sure, that’s half the fun! But, for me, not nearly as scary as #1 in this project. I’d go skydiving again in a heartbeat. In fact, I almost went a second time today, but figured I wouldn’t press my luck 🙂 The other one? Well, let’s just say I woke up in a cold sweat the other night just thinking about doing #1 again.

My first venture in this category was Indian food. Heralded as one of the ten best Indian restaurants in Las Vegas, Samosa Factory was where I popped my Indian cherry. Chicken curry, lamb kabobs and flat bread were devoured. To me, the food was delicious and definitely something I want to try again. The downfall? Apparently, acid reflux and Indian food do not mix… I was sick the whole next day, but it was well worth it!
The other night, as I was talking about travel plans and the possibility of going to Hawaii, the friend I was with said, “Wait on Hawaii.” He continued to explain that I should wait to go to Hawaii with someone special. In particular, a guy.
My response? Fuck that. You can’t wait your whole life for somebody that doesn’t exist. You can’t spend your life waiting or planning it around other people. As another friend learned this year, you can only control your choices, not other people’s. And sometimes, their choices affect your destiny, whether you agree with their choices or not.
I’ve waited ten years to go skydiving, four years to go to Disneyland and two years to leave Las Vegas because of other people. In 2011, I’m refusing to wait to do things I want to do because of other people.
The saying goes, to travel fast, go alone. To travel far, go with others. This year, I’m choosing to travel fast. Sure, I’d love to travel far, but I’m done waiting on ghosts and choices that others will never make.

Admittedly, this was a silly fear, but one nonetheless – Indoor tanning.
I was feeling extra pasty white and indoor tanning has been something I’ve always wanted to try. So, what better day then today? Honestly, the paying for the tan took longer than the tan itself. The funny part? What I was scared of doesn’t even happen! For whatever reason, I always envisioned these big beds where you had to close the lid on yourself. You know, a bit like laying in a coffin. I also always worried about the timer not going off at the right time and getting stuck in the coffin like box until I got seriously sunburned! Turns out both fears couldn’t be further from the truth.
Six minutes later, the result of the experience was complete 🙂 Although, I’ll have to wait a few more days to really see if indoor tanning makes my Irish skin a little tanner. And yes, my fear of indoor tanning has been abated.
Of course, I would start my project with something not on the list 🙂 Originally, I was going to categorize tonight under “10 Experiences,” but then I decided it could be a category all its own – 10 Moments that Scare Me.

I love the quote, “do something everyday that scares you.” It’s actually a magnet on my refrigerator. So, here I am. I’m doing 10 things that scare the crap out of me that I’ve never done before.
As you know, I have a lot of rules. One rule involves who comes over to my place. So, tonight, I broke 99% of my #1 rule and soberly invited a boy to come cook, have dinner and hang out at my apartment. To the average Joe? No big deal. To me? Well, let’s just say it took 24 hours to work up the courage to say my place vs. yours. And then, it took the rest of the day, breathing deeply, counting to 10 and trying not to hyperventilate to be okay with the decision. I told myself it was for the project. I told myself, Go Big or Go Home.
The result? A bit nerve racking. Okay, a lot nerve racking. But, it was fun as hell. Granted, I took some precautions. I kept all the bedroom doors closed. I didn’t give a tour of the space like a good hostess should. I didn’t let either one of us fall asleep. And the end of the night? Well, that was still the scariest part of all. But, I made it to the end of the ride, got off unscathed and decided it wasn’t as terrifying as I thought.
To be honest, I’m not sure if I’d willingly do it again, but I’m getting closer. Next step? Inviting a boy into the bedroom… can you hear the Alfred Hitchcock music? I can 🙂
I’m not one for making New Year’s resolutions. I think they’re bullshit. This year, true to form, I didn’t make resolutions on New Year’s. But, I have been thinking about change. I also spent the week watching friends start to put their resolutions into action. And, I got to thinking…
I’m really bad at planning, I love new experiences and I want to find out more about what I like and don’t like. Then, I thought about my 10 Guys, 10 Drinks, 10 Weeks project and how much I loved it. I also thought about how I hadn’t quite made it to 100 like Travis Dillinger. And so, my 2011 project was born:
1 Year, 10 Projects, 100 Discoveries.
Similar to 10 GDWs, I’m going to make each one a blog series, with each project being a trial of ten items. Since there are only 52 weeks in the year and I’m already behind, there will definitely be some overlap, but that’s okay; some projects will be easier than others 🙂
Here’s a sneak peak of a few:
In all honesty, I haven’t quite figured out all ten projects. But, I’m okay with that because I figure as the year passes, I’ll grow, things will change and I’ll naturally add projects to the list. I want to have wiggle room to do that.
Needless to say, I’m excited about the project. I’m not one for plans, but I’m working on change and I think making plans is Step One.
